




Nutmeg Jelly: Transforming Local Herbs into Trendy Chews to Elevate Thai Agri-Products
The School of Agricultural Technology and Food Industry, Walailak University, continues to champion agricultural product processing and community economic development. Recently, Asst. Prof. Dr. Thanong Aiewsiri served as a keynote speaker and demonstrator for a workshop titled “Value-Addition of Herbal Products through Processing” at the Nakhon Si Thammarat Provincial Office of Agriculture and Cooperatives in Ron Phibun District.
The session was filled with active participation as complex herbal concepts were transformed into engaging, practical learning. The workshop’s key highlight was the hands-on creation of “Nutmeg Jelly”—a trendy, chewy snack that leverages the unique identity of local herbs into a modern product.
Participants gained comprehensive, end-to-end practical experience, ranging from extracting key active compounds from nutmeg to refining flavors for contemporary palates and mastering the gelling process. This initiative not only adds significant value to local agricultural yields but also represents a promising Soft Power and a novel business opportunity for modern farmers and local entrepreneurs aiming for sustainable commercial success.
